history of the 'macaron'

A traditional French pastry, dating back to the 18thC, the macaron was originally served as individual shells. In the early 1930’s, Pierre Desfontaines, grandson of Louis Ernst Laduree, created a new delicacy of 2 shells filled with a ganache or buttercream. Macarons are now one of the world’s most sought after and desired pastries.
